Pikelets, make perfect finger food
We love finger food, especially when it is something easy to make, healthy to eat and the adults can enjoy it too. I have always liked making pancakes for breakfast but now I make picklets instead because they are the perfect size for little hands. I make a big batch and store leftovers in the fridge or freezer for snacks. I like plain picklets topped with fruit (like poached apples with cinnamon below) or maple syrup and ice-cream for the adults but there are also loads of things you can pack into picklets pre-cooking.
I assume most people know how to make pancake batter but in case you don’t or you usually buy premixed pancake mix, I am going to show you how easy it is. Once you have your basic pancake mix you can add fruit or cheese or anything that takes your fancy, mix it in and cook it up.
Dad’s – with Mother’s Day coming up, maybe you could think about making this for mum and bub for a special morning treat. (Hint hint!)Ingredients (Makes 2 dozen small pikelets) 2 eggs (beaten) 2 cups milk 2 cups plain flour 1 tsp baking powder 1 tsp vanilla
Sift flour and baking powder together over beaten eggs.
Pour in milk and vanilla essence.
Beat together until well combined. If needed add more flour or milk to get desired consistency (it should be a bit thicker than crepe or pancake mix so it doesn’t spread out too much).
Heat pan and add some butter to grease.
When pan is hot turn heat down to medium and pour in batter.
Done, Eat and enjoy!
You can experiment with different shapes. I was wishing I had a dinosaur cookie cutter.
Or try adding grated cheese to the top just after dropping the batter in.
Or one of our new favourites for snack time are fruit pikelets made with mashed banana or grated apple. You could also try, raspberries and ricotta or diced tomato and feta for something savoury.
