Baby Apple Yoghurt Cookies
Well it’s Easter tomorrow and while I can’t wait for Finn to enjoy the magic of Easter and the Easter Bunny, I can wait for him to load his little body up with sugar and chocolate. So I wanted to create a recipe that would be a yummy Easter treat for him without all the nasty sugars. The only remotely naughty ingredient is a tiny bit of apple juice and these cookies pack plenty of goodness with protein and calcium from the yoghurt and slow release carbohydrates from the oats. The recipe is wheat free. And most importantly for an Easter treat they taste good.
Makes approximately 2 dozen small cookies.Ingredients 1 cup baby muesli 1 cup quick oats 1/4 tsp baking soda 30g unsalted butter (melted) 1/2 cup plain yoghurt (I used Greek yoghurt) 1/4 cup apple juice 1/4 cup water
- Mix oats and baby muesli
- Add bicarb soda and mix well
- Add yoghurt, apple juice, water and melted butter. Mix well.
- Roll teaspoonfuls into balls.
- Place on greased and lined tray and flatten slightly.
- Bake in a preheated 180 deg oven for approximately 15 minutes depending on how hard you want them.
These cookies are crumbly and baby needs to be chewing finger foods confidently before they can enjoy these safely.
Dough can be frozen in balls to bake later.
Finn enjoyed some pre Easter cookies in the park.
